Dendermonde Whites
The Dendermonde White is a well-fleshed rabbit breed, weighing between 4 and 5 kg. In Dendermonde, it is almost always prepared with a brown sauce based on a local beer.
The breed has a spotless white coat and eyes ranging from red to ruby red. Thanks to its excellent flavour qualities, it is perfectly suited for a wide variety of dishes.

Dendermonde Vlaai (Pie)
Every region, sometimes even every family, has its own recipe for vlaai. Yet, the Dendermonde vlaai has its own distinctive characteristics. In his cookbook, Gaston Clement referred to it as the “flan of Dendermonde.”
Vlaai is still a fairground treat but is also enjoyed as an afternoon snack. Unlike what in other regions are called fruit pies or fruit flans, in much of East Flanders it is a fairly firm, sliceable tart made from baked goods (mastellen, gingerbread, speculoos, macaroons), candied sugar syrup, milk, eggs, and a hint of mace and/or cinnamon.

Ros Beiaard Chocolate and Pralines
In Dendermonde, we combine Belgium’s rich chocolate culture with another cultural icon: the Ros Beiaard. At the Dendermonde pastry shops, you can find beautiful small replicas of the real horse, with the Four Sons of Aymon on its back. They are available in three kinds of chocolate: dark, milk, and white.
Another delicacy is the Ros Beiaard praline. Made with the finest Callebaut chocolate and filled to taste with marzipan, hazelnut, or dark chocolate. A true showcase of skill and craftsmanship.

Ros Beiaard Cookies and Pastries
Bakers and shopkeepers in Dendermonde sell a variety of typical treats inspired by the Ros Beiaard. The Ros Beiaard cookies, shaped like the head of the mythical horse, are made from buttery shortcrust pastry. They taste delicious with a cup of coffee.
The Ros Beiaard pastry is a small cake consisting of two layers of fine almond sponge, separated by a thin layer of jam and flavoured with a southern liqueur. The sides are finished with flaked almonds. The whole is covered with a layer of marzipan, decorated with a fine drawing of the Ros Beiaard and the inscription “Dendermonde.”

La Confiance Speculoos
Reviving an old recipe and an old brand – that is the aim of La Confiance speculoos. Four years ago, Leo Borms discovered the recipes and notes of his great-grandfather Jozef Borms. Together with baker-partner August Vincke, he founded the small company La Confiance in the 1920s in Baasrode, now a district of Dendermonde. It was a successful business that produced both speculoos and gingerbread.

The high-quality champagne from the renowned house Veuve Fourny & Fils was renamed “Ros Beiaard Champagne” in the lead-up to the 2000 Ros Beiaard procession. With an alcohol content of 12% and a fresh taste, it is ideal as an aperitif or to accompany light, delicate dishes. An interesting fact: this champagne is sealed with a personalized “Ros Beiaard” muselet, a coveted item for collectors.

Vicaris
Since 2010-2011, the Ros Beiaard city has once again had a real brewery on its territory, where the Dilewyns family brews the delicious Vicaris beers. This brewing has resulted in a wide range of Vicaris beers: Quinto (5%), Tripel / Gueuze (7%), Tripel (8.5%), Generaal (8.5%), and Winter (10%).
Especially for the 2020 Ros Beiaard procession, the brewery brewed a tasty beer from flax, which is very unique. Delicious Ros Beiaard beer!

Orvélo
Orvélo is a full-bodied tripel with an alcohol content of 7.5% and bottle re-fermentation. The name refers both to the color of the beer (or = gold) and to brewer Luc De Norre’s cycling hobby (vélo).
Luc De Norre’s first brews date back to the 1980s, when the biochemist took a brewers’ course in Ghent. In his garage in Grembergen, he built a small 50-litre brewing system. The result of all this experimenting and tasting was Orvélo, a beer that has now established itself strongly in Dendermonde’s hospitality scene.

Malheur
Malheur beers are noble, living beers, with bottle and cask re-fermentation. The blonde Malheur beers are brewed according to an old method, using barley, hops, and yeast. The brown Malheur beers are brewed with hops and spices.

Pauwel Kwak and Tripel Karmeliet
Pauwel Kwak is an amber-colored beer with a malty character and hints of licorice. Its distinctive feature is that it is served in a “stirrup glass.”
Tripel Karmeliet is a beer inspired by an old recipe from the Dendermonde Carmelites and has been awarded multiple international prizes.

Tripel Abbey Beer Dendermonde
Tripel Abbey Beer Dendermonde is a dark-blonde, top-fermented beer with an alcohol content of 8%. Its flavor is gently sweet with bitter notes and a long finish.
The Dendermonde Saint Peter and Paul Abbey was one of the few abbeys without its own beer. After discussions with a friend and brewer Paul Saerens (Brouwerij De Block, Peizegem), it was decided to launch their own beer. It was designed to fit into the large range of abbey beers, and a tripel was chosen.
